Carrot cake
Prepare a 8 inches cake tin.
Method:
450g carrot
260g raisins
4 eggs
260g sugar
240ml corn oil
1 teaspoon vanilla
Grated zest of 2 orange
240g plain flour
2 teaspoon bicarbonate of soda
Pinch of salt
2 teaspoon ground cinnamon
Preheat the oven to 160 celcius and line a 8 inches cake tin.

- Finely grated the carrots and drain off any liquid.
- combine the grated carrots and raisins in a large bowl.
- In a clean mixing bowl beat the eggs, sugar for several minutes then add in oil, vanilla and orange zest and beat well.
- Sift the flour, bicarbonate of soda, salt and cinnamon into a seperated bowl, then gradually add these ingredients to the egg and sugar mixture, beating well. Pour this mixture into the bowl containing the carrots and raisin and mix well using a spatula until they are evenly blended.
- spoon the mixture into the prepare cake tin.
- Bake at 160 celcius for 30-45-60 minuts or insert a skewer into a cake when it come out clean.
