Carrot cake

Prepare a 8 inches cake tin.

Method:
450g carrot
260g raisins
4 eggs
260g sugar
240ml corn oil
1 teaspoon vanilla
Grated zest of 2 orange
240g plain flour
2 teaspoon bicarbonate of soda
Pinch of salt
2 teaspoon ground cinnamon

Preheat the oven to 160 celcius and line a 8 inches cake tin.



  1. Finely grated the carrots and drain off any liquid.

  2. combine the grated carrots and raisins in a large bowl.

  3. In a clean mixing bowl beat the eggs, sugar for several minutes then add in oil, vanilla and orange zest and beat well.

  4. Sift the flour, bicarbonate of soda, salt and cinnamon into a seperated bowl, then gradually add these ingredients to the egg and sugar mixture, beating well. Pour this mixture into the bowl containing the carrots and raisin and mix well using a spatula until they are evenly blended.

  5. spoon the mixture into the prepare cake tin.

  6. Bake at 160 celcius for 30-45-60 minuts or insert a skewer into a cake when it come out clean.
